Red bell pepper/capsicum - 2
Onion- 2 med
Mozzarella Cheese Slices - 4
Sandwich Bread - 8 slices
Balsamic vinegar- 1 tsp
Extra virgin Olive oil- 1 tbsp
Black Olives- 4
Tomato Ketchup - for serving
Basil leaf & olives- for garnishing
Butter- for toasting
Roast bell peppers, onions and garlic cloves directly on flame. You can use net (papad) roaster for this. (or bake in preheated oven for 25 to 30 mins till the veggies are cooked and slightly charred.)
Cover the veggies for few minutes, then remove skin of veggies.
Chop roasted bell pepper, onion and garlic. Also chop basil leaves and olives.
Combine all chopped veggies in a bowl.
Add balsamic vinegar, extra virgin olive oil, salt and pepper.
Now make the sandwiches. Place a slice of mozzarella cheese on top of the bread slice.
Spread some roasted veggies mixture on the top cheese. You may use another cheese slice over veggies. ;)
Cover with another slice of bread.
Melt some butter on a frying pan. Place the sandwich over the butter and cook for a min till they turn golden. (Or you can use sandwich toaster.)
Flip over and cook on other side till they turn golden.
Remove the golden sandwich on a cutting board and cut them in half.
Serve hot with tomato ketchup.
